Lime butter is very useful when you’re making a simple dinner and need an ingredient, condiment, or other food that perks up a dish. I like it with green beans but have used it (to rave reviews) as a condiment for fish, particularly salmon, mackerel, and bluefish.

Trim the ends of the beans and rinse them.

Cook the beans in lightly salted simmering water, uncovered, for 5– or until tender.

While the beans are cooking, place the butter, garlic, lime juice, ginger, lime peel, and salt and pepper to taste in a small saucepan over low-medium heat.

Cook for 2– or until the butter has melted.

Drain the beans and place them in a serving dish.

Add the butter sauce and toss ingredients.
