Smashed potatoes are made with waxy potatoes that hold their shape when cooked so they’re ragged and chunky, not fluffy and smooth like mashed potatoes. Few recipes are easier to prepare or are more welcome than this one.

Cook the potatoes in lightly salted simmering water for or until fork tender.

Drain the potatoes and place them in a serving bowl.

Heat the olive oil in the pot used to cook the potatoes.

Add the scallion and cook over low-medium heat for .

Add the butter and let it melt.

Add the potatoes and smash them so that they are opened and crushed.

Toss the ingredients to combine the potatoes with the oil-butter mixture.
