Instructions
Lightly grease a 9”x13” cake pan.
Preheat the oven to 350 degrees.
Sift the flour, baking soda, ginger, cinnamon, nutmeg, cloves and salt together into a bowl and set aside.
Beat the sugar, brown sugar and eggs together with a hand mixer or electric mixer set on medium speed for or until the mixture is smooth and creamy.
Add the honey and blend it in thoroughly, scraping down the sides of the bowl occasionally with a rubber spatula.
Blend in the sour cream.
Add the dry ingredients and beat for or until the batter is well blended.
Stir in the raisins and crystallized ginger.
Pour the batter into the prepared pan.
Bake for or until a cake tester inserted into the center comes out clean.
Let cool in the pan for , then invert onto a cake rack to cool completely.
Makes one sheet cake, 9”x13”
