Instructions
Preheat the oven broiler with the rack about 6 inches from the heat source.
Mix the eggs, milk and parsley together in a bowl and set aside.
Heat the olive oil in a sauté pan over medium heat.
Add the scallions and cook for about a minute or until slightly softened.
Add the tomatoes and peas and cook for a few seconds, stirring to distribute the vegetables in the pan.
Add the butter to the pan and when it has melted pour in the egg mixture.
Scatter the cheese on top.
Turn the heat to low.
Stir once or twice, then cook undisturbed for or until the bottom has set.
Place the pan under the broiler for up to a minute or until the frittata is puffed and golden.
Season to taste with salt freshly ground black pepper.
Makes 4 servings.
To bake the frittata, preheat the oven to 375 degrees.
