When we were growing up, we thought everyone called these cookies “Fannies.” Little did we know that this was one version of a recipe for classic butter cookies. This particular recipe came from the recipe files of one of our ancestors whose name happened to be “Fanny.”
Tips: What Is It? Lekvar is a sweet fruit spread that’s thicker than jam. You can use it in cookies or spread it between cake layers.
Difficulty: Intermediate
Instructions
Preheat the oven to 350°F.
Combine the butter and sugar in a large bowl and beat them with a handheld or electric mixer set at moderate speed , or until the mixture is light and fluffy.
Add the flour and mix at moderate speed 1–, or until it is almost incorporated.
Add the egg yolks, salt, and vanilla extract.
Mix the ingredients , or until a uniform dough forms.
(You may have to scrape the sides of the bowl and the beater with a rubber spatula.) Take off pieces of dough and shape them into balls about 1" in diameter.
Flatten the balls between your palms.
Press each circle with your thumb to make an indentation in the center.
Place the cookies on a cookie sheet, leaving an inch of space between them.
Fill the thumb print spaces with a small amount of the apricot lekvar, or apricot preserves (you’ll use about 1/2 cup in all).
Bake or until the cookies are golden brown.
You can freeze these cookies for 6 months.
