Edamame Succotash and Feta Cheese Quiche

Quiche is easy if you use a store-bought crust, and makes for a light but filling dinner. I’ve made this quiche with peas or lima beans instead of the edamame and used goat cheese instead of feta. If you like sweet red bell peppers you can include 2–3 chopped tablespoonfuls to the other ingredients.

Preheat the oven to 400°F.

Place aluminum foil over the pie crust and weight the foil down with beans or baking pellets.

Remove the foil and weights.

Return the crust to the oven and bake for .

Remove from the oven and lower the oven heat to 375°F.

Place the onion, edamame, corn, feta cheese, and parsley on the bottom of the partially baked crust.

Beat the eggs, cream, milk, salt, and pepper together until well blended and pour over the contents in the crust.
