grape or cherry tomatoes, carrots and matzo crackers Cut the pepper in half and remove the stem, seeds and white pith.

Chop into small pieces.

Peel the avocados and cut the flesh into a bowl.

Add the pepper, lime juice, garlic, cilantro, and salt to taste.

Mix and taste for seasoning, adding more lime juice or salt as needed.

Serve with cherry tomatoes, carrots and matzo crackers.
