When I am at a loss as to what to serve with plain grilled or roasted meat or poultry I often fall back on this recipe. It’s amazingly quick and easy to prepare and it is most forgiving: use white beans instead of black, frozen corn instead of peas, a different herb, and so on. If you like celery, you can add some (chopped) with the scallions.

Heat the olive oil in a sauté pan over medium heat.

Add the scallions and cook for or until slightly softened.

Add the tomatoes and peas and cook for another .

Add the beans, oregano, and salt and pepper to taste.

Cook briefly only to heat the beans through.
