Crispy Southwest Style Turkey Breast

This dish is gently spicy and the hearty flavorings bring out the best in turkey's mild meat.

Instructions
Preheat the oven to 400 degrees.
Place the turkey, skin side up, in a roasting pan.
Combine all the remaining ingredients except the cornmeal and brush the turkey skin with the mixture.
Roast, basting occasionally, or until a meats thermometer stuck into the thickest part of the breast registers 170 degrees.
Start checking the temperature after 1-1/.
If desired, sprinkle the cornmeal on top of the breast for the last of cooking.
HOT TIP: The USDA suggests cooking white meat turkey to a temperature of 170 degrees.
Cooking experts prefer 160 degrees.
Of course the meat is juicier at 160 degrees, but the choice is up to you.
In either case, be sure to follow safe food handling basics: wash your hands and wrap, refrigerate and defrost the meat properly.
