Cranberry Pie

This sweet-tangy pie is a refreshing dessert, especially after a big Thanksgiving meal of turkey and all the trimmings. Terrific with vanilla or coffee ice cream.

Preheat the oven to 400 degrees.

Make the dough (see Appendix recipes).

On a floured surface, roll out half the dough and fit it into a 9-inch pie pan.

Mix the cranberries, juice, orange peel, brown sugar, molasses, salt and tapioca in a bowl.

Mix ingredients and pour into the pie pan.

Cut the butter into small pieces and place them on top of the fruit.

Roll the remaining dough and place it on top of the berries.

Crimp the edges to seal the pie.

Bake for or until the crust is crisp and golden brown.
