Classic Potato Salad

Boil the potatoes in lightly salted water for or until they are fork tender.

Drain under cold water and peel.

Cut the potatoes into bite sized pieces and place them in a bowl.

Add the wine, shallot and parsley and toss the ingredients.

In a small bowl, combine the olive oil, wine vinegar and mustard.

Pour over the potatoes.

Toss, taste for seasoning and add salt and pepper to taste.
