Wash and dry the lettuce leaves and arrange them on a platter.

Place the chicken in a mound in the center.

Peel the avocado (if used) and cut slices from the flesh, placing them at the edge of the chicken.

Remove the stem and seeds from the pepper, cut it into strips, and arrange the strips near the avocado and chicken.

Place red onion slices around the platter, and put the olives here and there.

Combine the remaining ingredients in a bowl and whisk to blend them well.
