Chicken Cacciatore

Tender chicken and rich, savory gravy make this dish as special for company as it is heartwarming for family. Serve with pasta or polenta.

Instructions
Rinse the chicken and dredge it in the flour.
Shake off excess flour.
Heat one TB.
olive oil in a deep skillet over moderate heat and brown the chicken a few pieces at a time, adding the remaining olive oil as needed to prevent sticking.
Browning will take .
Remove the chicken from the pan.
Add the onions to the pan.
Cook for , or until they have softened.
Add the garlic and cook for another minute.
Add the tomatoes, tomato paste and wine and stir to blend them in.
Return the chicken to the pan.
Sprinkle with salt and pepper, parsley and basil.
Cover the pan and simmer for .
Baste ingredients once or twice during this time.
Add the mushrooms and cook, covered, another or until chicken is completely cooked through, basting occasionally.
