Chicken Basque Style

Instructions
Cook the ham in a large skillet over moderate heat for or until the dice begin to crisp.
Remove the ham and set it aside.
Wash and dry the chicken.
Add the olive oil to the pan and brown the chicken a few pieces at a time on all sides (this will take ).
Remove chicken and set aside.
Discard all but 2 TB.

Add the onion and garlic and cook over moderate heat for a minute or so.
Add the red and green peppers and cook for .
Return the chicken to the pan, including any juices that have accumulated.
Scatter the vegetables on top of the chicken and sprinkle the ingredients with some salt, pepper and the parsley.
Pour in the wine.
Cover the pan, turn the heat to low-moderate and cook for , or until the chicken has cooked through, basting the chicken occasionally.
Add the peas and ham.
Cover the pan and cook .
Serve the chicken topped with the vegetables and meat.
