Cherry Cobbler

Fresh cherries would be best here, but you can substitute good canned cherries. This is a sweet, cheerful dessert best when still warm and served with some ice cream.

Instructions
Preheat the oven to 400 degrees.
In a bowl, mix the cherries, 3/4 cup sugar, tapioca, lemon juice and almond extract.
Let the mixture stand for .
Place the cherries in a baking dish.

Mix the flour, remaining sugar, baking powder and salt in a bowl.
Add remaining butter in chunks and cut it into the dry ingredients until the mixture is crumbly.
Beat the egg and milk together, add it to the dry ingredients and mix until a soft dough has formed.
Roll the dough out on a floured surface to a thickness of 1/2-inch.
Cut out circles on a floured surface with a cookie cutter or the rim of a glass.
Cover the cherries with the circles of dough.
Bake for or until the dough is golden brown.
