Cheese Fondue

This is the classic lush version of Swiss fondue. Serve it for casual gatherings of good friends; dunking into one pot inspires conviviality.

Instructions
Rub the inside of the fondue pot with the cut sides of the garlic.
Discard the garlic.
Pour the wine into the fondue pot and set it over low heat.
Combine the two cheeses and toss the gratings in the flour.
Add the cheese to the fondue pot gradually, stirring constantly with a wooden spoon.
When all the cheese has been added and has melted, stir in the kirschwasser.
Keep the flame at the lowest possible.
Skewer chunks of bread and dunk.
(makes 4-6 servings) Note: to vary, use 1-lb.
Monterey Jack Cheese and stir in 2 chopped jalapeno peppers; eliminate the kirschwasser and use lemon juice, vodka or tequila instead.
