Crispy outside, tender within, these rice balls are delicious with coffee and even as an hors d’oeuvre.

Cook rice and let it cool.

Mix the flour, baking powder, nutmeg and salt.

Stir in the lemon peel.

Beat the eggs and sugar for or until the mixture is light and fluffy.

Stir the rice into the egg mixture.

Gradually add the flour mixture, stirring to blend ingredients thoroughly.

Shape mixture into 12 balls.

Heat vegetable oil in a deep fat fryer or a deep skillet to 360 degrees.

Drop the balls a few at a time into the hot fat and fry for , or until they are golden brown.

Drain on paper towels.

Sprinkle with confectioner’s sugar or cinnamon sugar.
