Instructions
Melt the butter and set it aside to cool.
Sift the flour, sugar, baking powder, baking soda and salt into a bowl.
Mix the egg, buttermilk and melted, cooled butter in a second bowl.
Add the liquid ingredients to the dry ones and stir only until all the flour is moist.
Heat some butter on a griddle or in a large skillet over medium heat.
When the butter has melted and looks foamy, pour some batter into the pan to make circles, leaving some space between each one.
You can make the circle silver dollar size or very large; the easiest pancakes to cook are about 3" in diameter.
Cook the pancakes for about one minute or until tiny bubbles begin to appear on the surface.
Flip the pancakes with a rigid spatula and cook them another or until bottom side looks golden brown (lift the edge with the spatula).
