Preheat the broiler to 500 degrees and place the rack about 6” from the heat.

Remove the wing tip and cut the chicken wing into two separate pieces.

Wash and dry the wing parts and roll them around in the two tablespoons of melted butter.

Sprinkle them with salt and pepper.

Place the wings in a broiler pan, leaving plenty of space between them.

Broil for , turning them occasionally, or until they are lightly browned.

Remove them from the oven.

Heat the butter in a saucepan set over moderate heat.

When the butter has melted and looks foamy, stir in 3 TB.

of the hot pepper sauce and the cider vinegar.

Add the wings and toss them around the pan to coat them completely.

Taste some of the sauce and add the remaining hot sauce if you prefer very spicy wings.

Serve the wings with Blue Cheese Dressing and celery sticks.

Make the blue cheese dressing: put ingredients in a bowl andmix them with a whisk or use a blender or food processor.
