Bruschetta is usually an hors d’oeuvre made with garlic toast rounds topped with various ingredients such as chopped plum tomatoes. Because plum tomatoes have thick skins, most people peel them, which takes extra time, but I always use grape tomatoes, so I skip this step. Bruschetta is a terrific topping for grilled chicken and the contrast of hot meat and cool salad is a delight for the palate.

Cut the grape tomatoes into quarters and place them in a bowl.

Add the olive oil, garlic, basil, cayenne, and salt to taste.

Mix gently.
