Preheat the broiler.

Place the salmon steaks in a heatproof pan.

Mix the olive oil, mustard, lime juice, tarragon, and black pepper.

Spoon some of this mixture over the salmon.

Turn the salmon over and spoon remaining sauce over the fish.

Sole Meuniére This dish is a classic, and though it is extremely simple to make, it is one of the most elegant dishes you can serve company.

Excellent with steamed new potatoes or wild rice, and steamed asparagus, snow peas, or sautéed spinach.
