Remove the florets from the broccoli stalks by cutting them with a paring knife.

Cut the florets into bite-size pieces.

Cut a 1/2" slice from the bottom of each stem.

Peel the stems by using a paring knife to pull back a thin layer of the skin, starting at the cut end.

(Or use a vegetable peeler to peel the stems.) Cut the broccoli stems into bite-size pieces.

Steam the broccoli in a steamer insert or in a vegetable steamer for 6– or until barely tender.

Drain the broccoli under cold running water and set it aside.
