Beat the eggs in a bowl.

Stir in the milk, scallions, red pepper, ham, salt to taste and a few grindings of black pepper.

Melt the butter in an omelet pan over low-moderate heat.

When the butter has melted and looks foamy, add the egg mixture.

Fry for a minute or so and when the eggs begin to set at the edges, stir the mixture gently with a fork, bringing hardened edges toward the center to allow uncooked egg portions to reach the heat at the bottom of the pan.

Continue cooking and stirring this way occasionally for then cook undisturbed for a minute or so more, until the eggs are set but still moist looking.

Fold in half and serve.
