So easy! You don’t even have to cook this dish, yet it is elegant and delicious and looks as if you’ve fussed. The oatmeal cookie crust is rich and mellow tasting but you can substitute a graham cracker or chocolate crumb crust if you prefer. When you shop for the berries, use whichever look freshest: raspberries, strawberries, blackberries, blueberries—they are all fine (and you can use apricot jam instead of raspberry if you prefer).
Instructions
Mix the cookie crumbs and melted butter thoroughly.
Press evenly onto the bottom and sides of a 9-inch tart pan.
Chill for at least one hour.
Mix the mascarpone cheese, cream cheese, dairy sour cream, sugar, lemon juice, and vanilla extract until smooth and uniform.
Spoon the filling into the oatmeal crust and spread it evenly.
Chill for at least one hour.
Before serving, arrange the berries on top of the tart.
Melt the jam and brush lightly on top of the berries.
Makes 8 servings.
