Cook the beets in lightly salted water for or so until they are cooked through.

Set aside to cool and then peel the beets.

Slice the beets.

In a saucepan, heat the vegetable oil and butter.

Add the shallot and cook to soften the vegetable.

Add the orange juice and peel, the parsley and thyme.

Cook over moderate heat a minute or so, add the beets, coat them thoroughly and serve them dressed with the sauce.
