Baking Powder Biscuits

Preheat the oven to 400 degrees.

Lightly grease a cookie sheet.

Sift the flour, cake flour, baking powder, salt and baking soda into a bowl.

Stir in the lemon peel, if used.

Add the butter and work it into dry ingredients using your fingers or a pastry blender, until the mixture resembles coarse meal.

Pour in the buttermilk and quickly mix the ingredients into a soft ball of dough.

Place the dough on a lightly floured surface and knead about 10 times.

Roll or press the dough gently to 1/2-inch thickness.

Cut out biscuits using a cookie or doughnut cutter (or the rim of a water glass).

Place the pieces one inch apart (for darker biscuits) or close together (for fluffier biscuits) on the cookie sheet.

Bake for or lightly browned.
