Baking Powder Biscuits

Combine the flour, baking powder, salt and baking soda.

Add the fat and cut it into the dry ingredients with two knives, your fingers or a pastry blender until the mixture resembles meal.

Add the buttermilk and quickly work the mixture into a soft ball.

Place the dough on a lightly floured surface and knead it about 10 times.

Roll or press the dough gently to 1/2" thickness.

Cut with a knife or doughnut cutter.

Place pieces 1" apart (for darker biscuits) or close together (for fluffier biscuits) on a lightly greased cookie sheet and bake in a preheated 400 degree oven for or until the biscuits are lightly browned.
