Sometimes you’re in the mood for uncomplicated, familiar flavors like the ones in this dish. The mild herbs appeal even to children. Substitute fish include snapper, cod, Chilean sea bass, or halibut. Zucchini Fritters (page xx) and Mustard-Roasted Potatoes with Lemon-Oregano Dressing (page xx) are suitable side dishes.

Preheat the oven to 450°F.

Place the fillets in a baking dish and brush with 1 tablespoon olive oil.

Sprinkle with the lemon juice.

Season to taste with salt and pepper.

Sprinkle the shallot, garlic, tomatoes, parsley, oregano, basil, and bread crumbs on top of the fish.

Bake for 12– or until the fish is cooked through and the bread crumbs are lightly browned.
